Indonesian Vegetable Pickle Recipe

Ingredients

medium sized cucumbers
medium sized carrot
small onions, halved
garlic, chopped
vinegar
water
red chilies
turmeric powder
sugar
fresh ginger
ground candlenut
salt
oil

 

Method:

  1. Peel, cut cucumber lengthwise into finger-length pieces. Remove pulpy core. Similarly, skin and cut carrot.

  2. Salt and chill them for 3 hours, Wash, squeeze out excess liquid and dry.

  3. Sauté onion, garlic, ginger in oil until soft.

  4. Add ground candlenut, turmeric powder, sugar and a tablespoon of salt. Stir together, then add vinegar and water. Simmer for 10 minutes.

  5. Pour this mixture over the cucumber, whole chilies and carrot. Let stand at least for 1 hour before serving.
