Plum Sauce Recipe

Ingredients

500 g/1 lb

25 g/1 oz
65 g/2 1/4 oz
125ml/4 fl oz
1 tsp
1 tsp

plums
large onion
ginger
sugar
fruit vinegar
ground coriander
sambal oelek

Method:

  1. Wash 500 g plums, cut in half and remove the stones. Place the plums in a large pan. Peel 1 large onion, chop and add to the pan.

  2. Peel and chop ginger and mix with sugar, fruit vinegar, ground coriander and sambal oelek. Bring to the boil, stirring constantly, then simmer uncovered over a very low heat, stirring constantly, then simmer uncovered over a very low heat, stirring frequently, for about 30 minutes. Leave to cool.
