light soy sauce
shallots, pound
garlic, pound
wine

Method:

Cut the chicken into half
lengthwise and marinate for about 1 hour.

Heat a frying pan until very hot,
add in 20 tbsp oil. When the oil is very hot,
deep fry the chicken for 3 minutes on each side.
pour off the oil, place the chicken in the
frying pan, skin facing up. Place the pieces of
bacon on the chicken. Add another 10 tbsp water,
cover the chicken and simmer for 20 minutes.

Grill the chicken under a low
flame before serving.
