Ingredients

Rempah (Pound together ):

Add in:
1 tsp
1 tsp
1/4 tsp
1/2 tbsp

fish (Ikan Tenggiri), cut into small pieces
tomato, quartered
coconut, grated, add 580ml (20 oz) water, squeeze
for milk, discard pulp
sugar
salt
oil

thumb size piece ginger
shallots (bawang merah)


turmeric (kunyit) powder
coriander (ketumbar) powder
cumin (jintan puteh)
chilies powder

Method:

  1. Over a high fire heat a frying pan until very hot. Add in 5 tbsp oil, stir-fry the rempah. Add a ladle spoon (about 5 tbsp) of coconut milk, simmer for a minute. Over a high fire, add in the remaining coconut milk, stir continuously, and then add in the fish.

  2. Continue to stir, simmer for 10 minutes, add the tomato, 1/2 tbsp sugar and 1/2 tbsp salt, and simmer until fish is cooked, about 5 more minutes.
