Ingredients:

won ton wrappers
finely minced pork
bamboo shoots, finely chopped
spring onion, finely chopped
finely chopped fresh coriander
light soy sauce
vegetable oil for deep frying

Method:

Cover wrappers
with a wet cloth until needed.

In a food
processor grind pork until smooth. Transfer to a
bowl. Add bamboo shoots, onion, coriander and
light soy sauce; work to smooth paste using
hands.

To form the
dumplings place a rounded tablespoon of the
filling in the center of a wrapper and press the
edges of wrapper up and around to enclose it.

Heat oil to
moderately hot and fry the Dim Sims, several at
a time, until the pastry is golden brown, about
2 minutes. Remove and drain on absorbent paper.

Serve the Dim Sims
hot with small dishes of soy sauce for dipping.
