Spanakopitta (Cheese & Spinach Puffs) Recipe

 


Ingredients

500 g
200 g
1/2 tsp
125 g

frozen spinach, thawed
cream cheese, cubed
nutmeg
butter, melted
Frozen filo pastry, thawed

Method:

  1. Add two tbsp of melted butter in a frying pan. When heated, add the spinach and fry till fairly dry, adding some more butter if necessary. Place the cheese cubes on top of the spinach and stir vigorously until cheese is melted and the spinach evenly coated. Sprinkle nutmeg over the mixture, stir and cook till heated through. remove from heat and set aside.

  2. To prepare the pastry, dust worktop with a litter flour. Separate the sheets of filo pastry and place one on the worktop. Brush the entire surface with melted butter. place another sheet on top and brush with butter again. Repeat the process until you get six sheets. Cut the pastry into strips of about 5 cm wide.

  3. On each strip of pastry, place about a tbsp of spinach mixture on the top and fold the right corner down to the left side. From there, fold to the right, forming the shape of a triangle. continue until you reach the bottom.

  4. Place all prepare puffs on a backing sheet and cook in the oven with a temperature of about 300C for about 20 minutes or until they're golden brown.

Tip : The puffs can be prepared in advance. Bake them when you're ready to serve. they do not store well, so eat them fresh.
