Melon and Shredded Ham Soup Recipe

Ingredients:

1 x 600 g piece
100 g
5 cups
1 tbsp
2 tbsp

Seasoning:
1 1/2 tbsp
 

Chinese winter melon or use cucumbers
ham
chicken stock
finely sliced ginger
finely sliced spring onion


light soy sauce

 

Directions:

  1. Peel the melon. Cut into thin slices of 4 cm cubes.

  2. Slice the ham into long thin strips, each about 5 cm long.

  3. Place stock in a medium pan and bring to the boil. Reduce heat to simmering.

  4. Add the melon, ginger, shredded spring onion and soy sauce to soup. Simmer 2 minutes until melon is tender. Add ham to soup mixture, simmer 1 minutes until warmed through.

  5. Serve immediately.

Tips: Steamed slices of winter melon can be served as a vegetable. Dress with a little cooked crabmeat moistened with chicken stock.
