Ingredients:

1 x 600 g piece
100 g
5 cups
1 tbsp
2 tbsp
Seasoning:
1 1/2 tbsp

Chinese winter melon
or use cucumbers
ham
chicken stock
finely sliced ginger
finely sliced spring onion
light soy sauce
|

Directions:

Peel the melon.
Cut into thin slices of 4 cm cubes.

Slice the ham into
long thin strips, each about 5 cm long.

Place stock in a
medium pan and bring to the boil. Reduce heat to
simmering.

Add the melon,
ginger, shredded spring onion and soy sauce to
soup. Simmer 2 minutes until melon is tender.
Add ham to soup mixture, simmer 1 minutes until
warmed through.

Serve immediately.
Tips: Steamed slices of
winter melon can be served as a vegetable. Dress with a
little cooked crabmeat moistened with chicken stock.
