Quick Minestrone Soup Recipe

 


Ingredients:

50 g
150 g
125 g
75 g

2
1 sprig
35 g
1/2 cup
750 ml
1 tbsp
 

 

white bean/black-eye beans, washed
potatoes, cubed
carrots, cut into rings
onions, diced
tomatoes, peeled and diced
cloves garlic, crushed
 thyme
spaghetti or pasta, washed
mushroom of your choice
water
olive oil
salt to taste

Method:

  1. Sauté the garlic and thyme in the pressure cooker till the aroma rises, then add the beans. Pour the water onto the beans, bring to a boil and cover to cook on medium flame for 15 minutes.

  2. Add the rest of the vegetables, including the mushrooms. Cover and cook on high for two minutes.

  3. Next, stir in the tomatoes and pasta and cook till pasta softens and soup thickens. Serve with garlic bread.

Serves 2
