Sweet Corn and Crabmeat Soup Recipe

Ingredients:

2 cups
100 g
1
3 1/2 cups
2 tsp
3 tbsp
1 1/2 tbsp

Seasoning:
1 tsp

To garnish:

frozen or canned sweet corn kernels
crabmeat
spring onion, finely chopped
cups water
chicken stock powder
corn flour
light soy sauce

chopped spring onion green

 

 

Directions:

  1. Chop the corn in a food processor until partially ground.

  2. Mix corn, crabmeat and white parts of the spring onion in a saucepan, add water, stock powder and corn flour. Bring to the boil and simmer, stirring, until thickened.

  3. Season with soy sauce. Pour into soup bowls and garnish with the spring onion greens to serve.

Tips: This soup is equally delicious if it is made from 120 g finely chopped skinless chicken instead of the crabmeat.
