Ingredients: |

3/4 cup
4 cups
3/4 cup
3/4 cup
1/4 tsp |
loosely packed agar-agar strands
which have been soaked in water
warm water
sugar
diluted evaporated milk
a few drops of green food coloring
almond essence.

Method:

Soak agar-agar
strands in the warm water and then boil on
medium heat till agar-agar dissolves. Add sugar
and milk and, when boiling remove pan from heat
and add the green coloring and almond essence.

Strain liquid through fine
plastic sieve into a large jug. Wet small fancy
moulds and pour the agar-agar mixture into them,
but not too full. Cool and then put the moulds
of agar-agar into fridge to chill.

To serve, unmould agar-agar into
glass dish and add 1 tin chilled longans and
about 2 cups of red water-melon balls. (If you
do not have the scoop to make the melon balls,
cut water melon into small squares).
