Ingredients: |

2 cups
3 1/2 tbsp

1/4 tsp

milk (diluted evaporated)
corn flour mixed with 2 tbsp cols water
sugar
salt
egg, yolks & whites separated
a few drops of cochineal

Method:

Put milk in
saucepan and bring to the boil, add sugar and
salt, and stir. Remove pan from heat and pour in
the corn flour mixture, stirring all the time.

Return pan to heat, stir until it
boils. Remove from heat again, and pour in
slowly the beaten egg yolk, stirring constantly.
Return to heat, and stir till mixture boils.

Remove from heat, add a few drops
of cochineal and fold the stiffly beaten egg
whites into the hot mixture.

Wet 6 or 7 small jelly moulds and
fill them with the corn flour pudding. Cool and
then chill in refrigerator till time to serve.

Serve with Strawberry Jam Sauce
(Put 3 tbsp strawberry jam with 6 tbsp hot
water, mix well and bring to the boil. Use sauce
hot or cold.)
