Glutinous Rice Balls in Ningbo Style Recipe

Ingredients:

Pastry:
150 g
38 g

 

Filling:
300 g
132 g
750 g
 


glutinous rice flour
long-grain rice flour
a suitable amount of water
preserved osmanthus


black sesame
pig's fat
granulated sugar

Method:

  1. Filling : Sift sesame. Remove dirt. Wash and drain. Put sesame to a wok without oil. Stir fry sesame over low heat until it crack. Remove from wok and grind into sesame powder if the sesame can be crushed by hand.

  2. Remove skin of pig's fat. Cut into small pieces. Put into a blender to form paste.

  3. Mix sesame powder, fat paste and granulated sugar to form filling. Shape into small dice. Put the filling into refrigerator until it becomes hard.

  4. Pastry: Sift glutinous rice flour and long-gain rice flour together. Add a suitable amount of water. Mix well to form a soft and smooth dough. Take a suitable portion from the dough and put in filling. Shape into a ball. Put the balls into boiling water. Cook until the balls float. Then cook for a while. Pour into bowls. Serve with preserved osmanthus.
