Gula Melaka (Coconut Sugar) and
Coconut Milk Agar-agar (Jelly) Recipe

Ingredients:

1 cup
2 cups
1 cup
2 cups
1/2 tsp

softened agar-agar strands.
water
gula-melaka (Coconut sugar)
coconut milk from 1 coconut. (Grated, white)
salt

Method:

  1. In large deep saucepan soak the agar-agar strands in 2 cups water. Then bring to the boil on low heat, and simmer till strands have dissolved.

  2. Add 3/4 cup gula-melaka syrup and when boiling add the 2 cups coconut milk and salt. Taste for sweetness and, if too sweet, add another 1/4 cup water. If it needs more sugar, add another 1/4 cup water. If it needs more sugar, add 1/4 cup coconut sugar. Keep careful watch on agar-agar mixture and as soon as it begins to boil, remove pan from heat, and strain mixture through fine wire-mesh sieve into a wet mould. Cool, and chill in refrigerator.

  3. Unmould on to large platter, cut into pieces and serve as a sweet.

  4. The agar-agar when unmoulded, should have two layers, the one below light brown, the top layer clear brown.
