Method:
-
In large deep
saucepan soak the agar-agar strands in 2 cups
water. Then bring to the boil on low heat, and
simmer till strands have dissolved.
-
Add 3/4 cup gula-melaka syrup and
when boiling add the 2 cups coconut milk and
salt. Taste for sweetness and, if too sweet, add
another 1/4 cup water. If it needs more sugar,
add another 1/4 cup water. If it needs more
sugar, add 1/4 cup coconut sugar. Keep careful
watch on agar-agar mixture and as soon as it
begins to boil, remove pan from heat, and strain
mixture through fine wire-mesh sieve into a wet
mould. Cool, and chill in refrigerator.
-
Unmould on to large platter, cut
into pieces and serve as a sweet.
-
The agar-agar when unmoulded,
should have two layers, the one below light
brown, the top layer clear brown.
