Beef in Oyster Sauce with Mushrooms Recipe

Ingredients:

600 g
1 tbsp
1 tsp
2 tsp
1 medium
2 tbsp
200 g
1/4 cup
1 tsp
2 tbsp
2 tbsp
 

tender beef (rump or sirloin)
fish sauce
sugar
finely shredded ginger
onion, sliced
vegetables oil
canned straw mushrooms, drained
beef stock or water
corn flour
oyster sauce
chopped spring onions

Method:

  1. Trim beef of fat. Thinly slice into narrow strip. Place beef in a bowl and add fish sauce and sugar. Marinate for 1 hour, turning occasionally.

  2. Stir-fry the ginger and onion in the oil until they are softened. Add beef and stir-fry about 2 minutes. Add the straw mushrooms and heat through.

  3. Mix the stock or water with the corn flour. Pour into the pan and stir until thickened. Add oyster sauce and half the spring onions. Mix in and heat gently.

  4. Serve beef and sauce over rice, garnished with the remaining spring onions.

Serves 4
