Chicken Stir-fry with Chilies and Basil Recipe

Ingredients:
300 g

chicken breast, with skin
peanut or vegetable oil
spring onions, diced
bird's eye chilies, chopped
dark soy sauce
palm sugar
fish sauce
Thai basil leaves
Method:
Cut the chicken
into small cubes.
Heat oil in wok.
Stir-fry chicken over high heat until chicken
turns white.
Add spring onions and chilies
and stir-fry 1 minute.
Add the sauce and crushed sugar,
toss briefly and add the basil leaves.
Serve with rice.
Notes: Bird's eye chilies can
replace 1 sliced red or green chili made milder by
removing the seeds.
