Chicken Stir-fry with Chilies and Basil Recipe

Ingredients:

300 g
2 tbsp
2
2 tbsp
1 tbsp
2 tbsp
2 tbsp
1 cup
 

chicken breast, with skin
peanut or vegetable oil
spring onions, diced
bird's eye chilies, chopped
dark soy sauce
palm sugar
fish sauce
Thai basil leaves

Method:

  1. Cut the chicken into small cubes.

  2. Heat oil in wok. Stir-fry chicken over high heat until chicken turns white.

  3. Add spring onions and chilies and stir-fry 1 minute.

  4. Add the sauce and crushed sugar, toss briefly and add the basil leaves.

  5. Serve with rice.

Notes: Bird's eye chilies can replace 1 sliced red or green chili made milder by removing the seeds.

Serve 4
