Fried Chicken with Garlic Recipe

Ingredients

chicken breast, skinned and boned
garlic cloves, peeled and crushed
Freshly ground black pepper
soy sauce
sugar
salt
sesame seed oil
vegetable oil for shallow-frying

 

Method:
 

  1. Slit the surface of the chicken breasts on both sides, using a very sharp knife. Put the remaining ingredients in a bowl, mix well, then rub into the chicken breasts. Leave to marinate for 2 hours.

  2. Heat about 5 tablespoons vegetable oil in a wok or frying pan (skillet). Add 2 chicken breasts and fry over moderate heat for about 4 minutes on each side until golden brown. Remove from the pan and drain. Fry the remaining chicken breasts in the same way, adding more oil to the pan if necessary.

  3. Cut each chicken breast in half, return to the pan and fry until the cut edges of the meat are no longer pink. Serve hot.

Serves 4
