Green Chicken Curry Recipe

coriander deeds
black peppercorns
fresh green chilies, seeded and chopped
Thai ginger (kha) or 2 tsp laos powder
chopped coriander leaves, roots and stems
large cloves garlic
chopped spring onions (green and white parts)
lemon grass root, roughly chopped
vegetables oil
coconut oil
kaffir lime leaves
boneless chicken
small bunch fresh basil leaves
fish sauce

Method:

  1. Grind coriander and peppercorns to a powder in a spice grinder or mortar.

  2. Add the fresh seasonings (chilies, ginger, coriander onions and lemon grass) and grind to a paste.

  3. Fry this seasoning paste in a medium saucepan with the vegetable oil for 3-4 minutes. Add the coconut cream and lime leaves and simmer for 10 minutes.

  4. Cut the chicken into 2 cm cubes. Add to the sauce with 1 cup water and simmer until the chicken is tender, about 20 minutes.

  5. Pick basil leaves from the stems. Add basil and fish sauce to the curry to taste. Serve over rice.
