Pork Dip Recipe

Ingredients:

180 g
2 tbsp
1/2 tsp
1/2 tsp
1 tsp
2 tbsp
1 cup
1 1/2 tbsp
1 1/2 tsp
2 tsp
1 packet
 

finely minced pork
peanut or vegetable oil
mashed garlic
finely chopped lemon grass root
hot chili sauce
smooth peanut butter
coconut cream
fish sauce
brown sugar
chopped coriander (optional)
small plain Japanese rice crackers

Method:

  1. Cook pork in a small pan, stirring until well colored, add garlic and lemon grass and cook another 2 minutes.

  2. Add peanut butter, coconut cream, brown sugar, fish and chili sauce and cook until the dip has thickened. Stir in coriander.

  3. Spoon the hot sauce into small bowls and serve hot with the crackers.

Notes: Pork Dip can also be served with fresh vegetable sticks - try carrots, cauliflower, red or green capsicum. Chicken or beef mince can replace the pork mince if preferred.

Serves 4-6
