coconut cream

Method:

Cook pork in a
small pan, stirring until well colored, add
garlic and lemon grass and cook another 2
minutes.

Add peanut butter, coconut
cream, brown sugar, fish and chili sauce and
cook until the dip has thickened. Stir in
coriander.

Spoon the hot sauce into small
bowls and serve hot with the crackers.
Notes: Pork Dip can also be served
with fresh vegetable sticks - try carrots,
cauliflower, red or green capsicum. Chicken or beef
mince can replace the pork mince if preferred.
