Son-in-law Eggs Recipe
(Kai Look Koei)

Ingredients:

2 tbsp

vegetable oil
shallots, peeled and finely chopped
hard-boiled eggs, shelled and quartered
tamarind water
water
brown sugar
nam pla to taste
 

 

Method:

  1. Heat the oil in a wok or deep frying pan (deep-fat fryer). Add the shallots and fry until brown. Remove from the pan with a slotted spoon and set aside.

  2. Add the eggs to the pan and fry until crisp and blistered on the outside, then remove from the pan with a slotted spoon and set aside.

  3. Add the remaining ingredients to the pan cook for 5 minutes, stirring constantly. Return the eggs to the pan and heat gently for 2 minutes, stirring carefully. Transfer to a warmed serving dish and garnish with the fried shallots. Serve hot.
