Sticky Rice with Black Beans Recipe
(Kow Neo Tua Dom)

In Thailand, this dish is cooking and sold in hollow sticks of green bamboo which have been cooked over charcoal. This recipe has been adapted for a domestic oven. Dried black beans are available at Chinese, Indian and Italian supermarkets.

Ingredients

150 g/5 oz
600 ml/1 pint
50 g/2 oz
40 g/11/2 oz
25 g/1 oz

creamed coconut, roughly chopped
water
dried black beans, soaked in cold water for 12 hours
glutinous (sweet) rice
coconut sugar

 

Method:
 

  1. Put the creamed coconut (coconut milk) and water in a pan and heat gently, stirring frequently.

  2. Drain the beans, then mix with the rice, sugar and coconut milk. Pour into a baking dish, cover and bake in a preheated very cool (120C/250F) for about 3 hours, stirring after 2 hours. Serve hot.

Serves 4
