Thai Pawpaw Salad Recipe

Ingredients:

1
1/4 cup
1 tsp
4-6 tbsp
4-6 tbsp
1-2 tsp
1-4 tsp
 

medium-sized pawpaw, about 750 g
Chinese dried prawns, soaked in boiling water for 10 min.
Mashed garlic
lime or lemon juice
fish sauce
sugar
sweet chili sauce
cucumber and spring onions, to garnish
 

Method:

  1. Peel the pawpaw, remove seeds and cut into large cubes.

  2. Grind the prawns and garlic to a smooth paste in a food processor or mortar and add half the lime juice and fish sauce. Stir gently to combine.

  3. Slowly add the remaining lime juice and fish sauce, with sugar and sweet chili sauce to taste. The salad should have a tart-sweet taste.

  4. Pile the salad into a salad dish lined with lettuce leaves and garnish with thinly sliced cucumber and sliced spring onions.

Serves 6
