The majority of Thais are Buddhists and therefore have no dietary restrictions imposed by their religion. Meat is eaten, as are fish, vegetables and fruit. Hot, spicy yet light dishes are particularly popular, and rather milder dishes are served with highly seasoned sauces and dips. Limes, coconut milk and unsalted rice help to alleviate the heat of the food. Commonly used seasonings include sour ones such as lemon grass, kaffir lime leaves and tamarind, as well as garlic, shallots, coriander, galingale, ginger, basil, chili, shrimp paste, fish, oyster and plum sauce and less commonly, soy sauce. Pungent curry pastes prepared from a wide assortment of fresh ingredients, peanuts, various leaf vegetables, green beans, fresh fruit and fish dishes are also popular.
