Chicken Feet Soup with Young Coconut Recipe

Ingredients:

Seasoning
:

young coconut
chicken feet
lean pork
Jin Hua ham
ginger slice
water

fish gravy
salt

Method:

  1. Cut open coconut. Pour out juice. Scoop out flesh.

  2. Trim chicken feet. Scald feet and lean pork in boiling water. Dish up. Rinse well.

  3. Bring 8 cups of water to the boil. Add ginger, coconut juice, coconut flesh, chicken feet, lean pork and ham. Boil again. Turn to low heat and simmer for 21/2 hours. Then add seasoning. Serve.
