Pork and Shrimp Crepe (Bahn Xeo) Recipe

A crepe - pronounced "krep" in French - is a thin pancake with a savoury or sweet filling that is popular in French cuisine. The way to eat this Vietnamese crepe is to cut it into small portions and wrap each portion in a lettuce leaf with fresh herbs.

Ingredients:

Crepes (pancakes):

Marinate:
2 tbsp
1 tsp
1 tsp
1 tsp
1/2 tsp
1/4 tsp
1/4 tsp

anchovy
stalks lemongrass, crushed
green chilies, crushed


fish gravy
grated garlic
grated shallot
grated Laos root
grated black pepper
salt
granulated sugar
 

Method:

  1. Scale and gut anchovy. Wash and wipe dry. Add crushed lemongrass, crushed green chili and marinade ingredients. Mix well and marinade for 2 hours.

  2. Wipe away marinade ingredients from anchovy. Dish up in a strainer. Press with a heavy object to squeeze out water.

  3. Heat oil to the boil. Deep fry anchovy until golden brown. Dish up. Garnish with Chinese parsley and chili. Serve with sweet and sour sauce as dipping sauce.
