Remove hair from
trotter. Chop up and wash. Parboil in boiling
water for 5 minutes. Dish up and rinse.
Heat 2 tbsp of
oil. Saute dried chilies, garlic, shallots,
lemongrass and trotter until fragrant. Sizzle
wine. Add seasoning and Laos root. Bring to the
boil. Transfer to an earthen pot. Stew until
tender (turn trotter several times to avoid from
sticking to pot). Stir in coconut juice. try the
taste. Serve in pot.
