Vegetable Platter Recipe

A platter of a raw vegetables is an important part of almost every Laotian, Cambodian or Vietnamese meal. In South-East Asia, a variety of vegetables and different herbs are used. A satisfactory vegetable platter can however be made with fewer ingredients.



Ingredients

soft lettuce leaves

mint leaves

coriander leaves

cucumber, partially peeled and thinly sliced into half-moon shapes

 
 

 

 

 

Method:

  1. Pile the lettuce in a mound in the centre of a serving dish, then place the mint and coriander around the lettuce in separate mounds. Arrange the cucumber slices overlapping around the rim of the dish. Serve cold.

Serves 4
