Dairy Drinks

 

A snack of milk and biscuits may bring back fond memories of childhood, but many of today's modern dairy drinks have a truly adult sophistication. Even better, dairy drinks are always appropriate. Nutritious breakfast drinks, refreshing thirst-quenchers, milkshake treats, elegant fruit beverages, party eggnogs, soothing bedtime drinks - no matter what the occasion, there's a good dairy drink for it.

Because milk is basically bland, it's compatible with an almost infinite number of flavors. fruits, nuts, chocolate and spices can all be combined with milk to make delicious - and nutritious - drinks. If you're concerned about calories or cholesterol, you can substitute skimmed milk or low-fat milk for whole milk without affecting the drink.

When making hot milk drinks, never let the milk boil; heat it only until bubbles form around the edges and steam starts to rise. Boiled milk forms an unappetizing skin on the surface - and once it begins to boil, it boils over very quickly.

Shakes. Depending on where you live, you may call a milkshake a frappe, a frosted, a thick shake or a cabinet. In each case, what you want is a creamy, delicious mixture of milk, ice cream and fruit or a flavored syrup, all blended together into a thick, frosty mixture. No longer just for teenagers, milkshakes are now part of adult entertaining.

Yoghurt drinks. The rich, tangy flavor of yoghurt can be enjoyed in many drinks. some, such as the remarkably refreshing lassi from India, rely on plain yoghurt for their flavor; others add fruit and other flavorings. Like milk, yoghurt combines well with almost anything.

Buttermilk drinks. Those who enjoy yoghurt-based drinks will probably also enjoy drinks made with buttermilk. At one time a by-product of butter-making, buttermilk is now made by culturing skimmed milk to produce a low-calorie beverage with a characteristic tangy, full bodied flavor. buttermilk drinks, though perhaps unusual, are also intriguingly delicious.

Soya milk. Make from soybean, soya milk is a nutritious alternative to cow's milk. it's particularly valued by those who cannot digest milk easily. to prepare soya milk, simply follow the directions given on the packaged natural soya powder sold at health-food shops. In general, you can substitute an equivalent amount of soya milk in recipes calling for milk, but some experimentation may be needed.

Eggnogs. Traditionally served during the Christmas season, eggnogs are delicious all year round. When fruit is added, they take on a new dimension - try an eggnog for breakfast in a hurry or for a surprisingly refreshing hot-weather drink.

When making eggnogs, milkshakes or any other cold dairy drink, always start with well-chilled ingredients. And no matter what dairy drink you make, always serve it at once.
