Orange Almond Milk Recipe

 


Ingredients

150 g/6 oz
200 g/7 oz
1.21 l/2 pints
90 ml/3.5 fl oz
2 3/4 liter/5 pints



unsalted roasted almonds
icing sugar
pints water
orange flower water
milk

 

Method:

  1. Drop almonds into a saucepan filled with boiling water and blanch 30 seconds. Drain almonds well, then rub in a towel to remove skins. Process almonds and 1/2 of icing sugar in a blender until nuts are very finely ground. Combine almond mixture and water in a large bowl, cover and let stand overnight. Stir in orange flower water. Place milk in a large jug and add remaining icing sugar. Strain almond mixture through muslin into milk. Stir; refrigerate until well chilled. Makes 3 1/2 liters/6 pints.
