slices fresh root ginger
cinnamon stick
whole cloves
cardamom pops
apple juice
unsweetened pineapple juice
lemon, thinly sliced
oranges, thinly sliced
salt
rum, if desired
Method:
Tie root ginger, cinnamon stick, cloves and cardamom
together in a piece of muslin. Combine apple juice, pineapple juice,
lemon juice and orange juice in a large kettle or pot. Add spice bag
and bring to the boil over low heat. Adjust heat and simmer 15
minutes, stirring. Stir in salt. Discard spice bag. Stir in rum just
before serving, if desired. Serve hot. Makes 6 liters/10 pints.
